Project details

Matthias Bernwieser wanted a compact, powerful and efficient kitchen in a reduced space. Even with limited space and curved walls we managed to propose a very functional and ergonomic layout with a hot course area, a cold course area, a waiters’ office and a dishwashing area. Today BRASSERIE OUEST is full every day and the chef is completely satisfied of the production capacity of his kitchen (video). The “L” shaped pass with a heating double shelf (“L” shaped too) on top of it gives them the flexibility and the needed delivery surface. Thanks for your trust Matthias!!!
